These air fryer recipes are the ones I come back to after two years of cooking almost every dinner in a basket: chicken that is juicy instead of chalky, steak and salmon that take 12 minutes, meatballs and salmon bites that crisp without a drop of frying oil, and the potatoes and green beans that make it a meal. The air fryer is the fastest way I know to put a high protein dinner on the table on a weeknight — most of the dinners below are 20 to 30 minutes start to finish and 32 to 48g of protein a serving. Below: how I use mine, the three mistakes that keep food from getting crispy, then every air fryer recipe on the site grouped by what it is, each with its time and protein. If you are tracking protein, the protein calculator gives you a daily target in ten seconds.
Crowding the basket. If pieces overlap, they steam. A single layer with a little space between pieces, two batches if it takes two batches. This is the fix for 80% of "my air fryer food is soggy" problems.
Wet food. Water on the surface has to boil off before browning starts. Pat chicken, salmon and shrimp dry with a towel; rinse cut potatoes to wash off the starch and then dry them again. The dry-then-oil step is in every recipe below for a reason.
No fat at all. The air fryer is not a no-oil machine, it is a very-little-oil machine. A teaspoon of oil tossed through a pound of chicken or potatoes is what makes the edges go golden; for breaded things, an even coat of oil spray keeps the crumbs from staying pale and dry.
It has to be cooked in the basket, not just reheated there; it has to be something I would make on a weeknight without the air fryer as an excuse; and for the dinners, it has to hit 30g of protein or more a serving (the sides are the exception — they are here because they are what I serve with the dinners). The chicken meatballs, Greek turkey meatballs and turkey burgers have an oven method too, with the air fryer times in the post. Everything below is a real recipe with exact times, temperatures and the mistakes I made testing it.
Most of these were tested in a basket air fryer and a Ninja Crispi; if you cook this way most nights, the Super Easy Ninja Crispi Air Fryer Cookbook is the book I point readers to for a full rotation.Where the air fryer earns its counter space: juicy chicken in 20 minutes, crispy skin without a pan of oil, and the meatballs and burgers that meal-prep for the week.

The Super Easy Ninja Crispi Air Fryer Cookbook is the one I recommend — crispy, healthy, weeknight-fast recipes that use the basket the same way these do, with times that translate to any air fryer.
For anything you want crispy — chicken skin, wings, potatoes, salmon bites — yes, 3 to 5 minutes at the cooking temperature. A cold basket steams food for the first few minutes instead of searing it. For meatballs, tofu and reheating, skipping the preheat does not hurt.
380 to 400°F for almost everything. Boneless breasts and tenders: 380°F so the outside does not dry before the middle hits 165°F. Thighs, wings and drumsticks: 400°F for crispy skin. Every chicken recipe on this page gives the exact time, and a thermometer beats every timer.
Three causes, in order: the basket was crowded (air has to reach every surface — cook in batches), the food was wet (pat it dry, and for potatoes rinse off the starch and dry again), or there was no oil at all. A teaspoon of oil tossed through is enough for crisp edges; spray coats more evenly for breaded things.
Yes, as long as it is weighed down by food and does not block the airflow around the sides of the basket. Perforated parchment liners are the easiest for sticky things like honey garlic shrimp or salmon. Never preheat with an empty liner in — it blows into the heating element.
Yes. The times here were tested in a basket air fryer; a Ninja Crispi cooks almost identically, and an oven-style air fryer (Breville, Ninja Foodi oven) usually needs 2 to 3 more minutes because the food sits farther from the element. Check 2 minutes early the first time you make anything.
